
| Mangos are harvested and shipped when mature but still green. It is important to allow for a sufficient ripening period much like bananas and avocados.
Mangos are ripened at room temperature (70 - 75° F.) until fruit yields to gentle pressure when cradled in the palm. Try placing the fruit in a paper bag with a banana that is to be ripened in order to take advantage of the natural ripening gases released by the banana. Be sure to remove the banana before it gets too soft.
Mangos should not be refrigerated until desired ripeness has been achieved.
Once the desired amount of ripening has been completed, refrigeration is then suggested to maintain Vitamin C levels. Mangos can be refrigerated whole and unpeeled. Peeled or sliced fruit must be covered and will keep 3 - 4 days. Mangos may also be sliced and frozen at O° F. for 8 - 12 months. Fruit to be used as an ingredient in recipes, especially when cooking is required, is often not fully ripened. A medium mango, peeled and pitted, yields approximately 2 cups of fruit. |

|       DAVID'S FAMOUS Mango Delight | 3 sliced medium ripe mangos         1 cup water 1 cup brown sugar                        1 tsp. vanilla 1/2 tsp. cinnamon Bring sugar and water to a boil, Add flavorings and simmer for 5 min. Add mangos and simmer for 10-15 min. or until fruit is as soft as desired. Serve warm or cool, plain or over yogurt or ice cream. Sprinkle on your favorite toppings such as berries, nuts, raisins, granola, whipped cream, etc. Get fancy, flambé with rum, brandy, or cognac! |
|      Mango and Cilantro Salsa | 2 ripe mangos          1/4 cup minced red or green onion 1 ripe avocado          2 T chopped cilantro juice of one lime        1 t minced garlic, pressed to paste         1 jalapeno, seeded and chopped Peel and dice mangos and avocado. Combine with remaining ingredients. Serve as a topping for grilled fish, tofu or chicken, or as a dip for tortilla chips or rice crackers.
